Click on a field, in the sidebar click the gear icon to open the field properties. In that panel you can change all the field specific properties, name, value, flags, options, ....

You have to use the form field tool:

Action script and so on is nothing PDF24 specific, its part of the PDF spec, so I think there should be information ion the internet.
