What do the color model and color conversion options do?

I print from Word and can then in PDF Creator make a selection for Color model and Color conversion (exact English names I do not know - in Dutch called Kleurenmodel and Kleurenconversie). It is however unclear what these options do exactly and how they differ. This also comes to a more general question: is there documentation for the software available?

Here is a screenshot that describes both settings. Could be that the Dutch translation is not that good here. If we can optimize translation texts, tell me.
